I'm not going to go through each and every example just so you nitpick it and summarily declare them as a useless use cases. the value proposition is same as it's always been for crypto: permissionlessness, transparency, etc, etc.

This is just simply not true. Legal rights for NFT holders can be explicit just like anything else. Here's an excerpt from one that I hold. there's no reason this can't exist with other collections (and it does)
