Well, they don't have to be "no-escape" to be effective deterrents. Missiles have a maximum range in ideal conditions and they have something called the Minimum Abort Range (MAR). If you cross that imaginary line and enter the MAR, then your only option is to try to dodge or decoy the missile. If you are outside the MAR, you still have the option to turn and run away from the missile, as missiles have very limited fuel which burns in the first 6-10 seconds in most cases. The MAR is variable and changes with altitude and the speed of the aircraft firing it, as well as the speed/altitude of the target. Lots of other factors as well, but those are the biggest.

So, if a Russian jet is detected approaching the front line and an AMRAAM is fired at it from 70 miles away, the Su can easily turn away and outrun the missile, but it has to turn away. The closer they get to their target, it becomes exponentially more dangerous for them. That's also not accounting for the fact that the Ukrainian fighter can pursue it as well. In almost all cases, the Russians aren't going to risk losing a multi-million dollar piece of hardware and a trained pilot to drop 2 bombs on a bunch of Ukrainian infantry.
