I think you're broadening the term "meme stock" far too much. WSB is following NVDA and AMD so much because the AI space is red hot lately. It's driving the market, of course the most infamous investing sub will be talking a LOT about it, and other stocks in the AI space. That's very different than GME and PLTN, which were both specific theories of the case in stocks that were not major market players.

Essentially - cause and effect. NVidea and the AI market space are driving discussions on WSB, whereas meme stock activity is driven more by retail investor discussions and theories.
