Because of market share! Currently 70(SEVENTY!)% of windows users are using Windows 10 and only 26% are using Windows 11. Especially amid controversial announcements with windows 11, it is very surprising to me that they are ending service only a year from now.

For comparison in 2019, one year before Windows 7 support ended, only 33.3% of users were still using windows 7. https://gs.statcounter.com/windows-version-market-share/desktop/worldwide/#monthly-201905-201905-bar

I think that is extremely surprising that they are ending security updates for a product that almost their entire user base is using and only giving us ~~15~~ 17? months. It would make sense to end support for something the minority of your customers are using, but most people are still using windows 10 by FAR.
