They don’t? I work at a submerged arc furnace plant (ferrosilicon) and the arcs have temperatures in the many-thousands. The molten metal itself is between 1500 and 2000 somewhere, depending on the purity of the fesi and the conditions in the furnace.

open arc plants may have lower temperatures, though. Not too familiar with them. We need high temperatures in the submerged arc furnaces to dissuade the current from running between the electrodes through the charge, instead of down to the metal bath. Resistance furnaces are also relatively cold.
