There aren't as many companies with monopoly pricing power as you seem to think. Are you even able to list any?

The price gouging was caused by supply chain shortages. When that happens, companies have the option of increasing prices (and thus profits) or keeping prices the sameish and running out of stock. The 2nd option doesn't benefit you as much as you'd think because once it's out of stock, 3rd party resellers will just flip it back to you at market price anyways. We literally saw this with PS5's, Sony refused to increase the list price out of principle, which made it practically impossible to actually buy one at list price.

Making companies less efficient with worse economies of scale does nothing to solve supply chain shortages.
