They do actually, I have a family member working on training data and I went through orientation for it as well. I didn't pursue it further and can't comment on the specific details but I can assure you that they review chats and scan to see if the llms responses are good for the prompts given. The review process is meticulous and they check the responses to prompts as well as scanning for inappropriate content. There are remote positions for people that review interactions for chatgpt and other llms and the pay is decent for remote work when jobs are available but the amount of work you get is dependent on the quality and detail of your reviews. I saw numerous prompts similar to this in the qualification packet. I couldn't gamble on infrequent work though and I work with different models mostly. The process is interesting though.
