The current court isn't especially respected, and if it's powers are followed to their logical conclusion, it has the ability to simply 'interpret away' even the most straightforward rights enumerated in the constitution.

Like, i can't emphasize enough, at face value, the court can say "The First Amendment does not provide any right to free speech" Or "your right to due process does not entitle you to due process or a jury of your peers, the words in that sentence do not mean that you get those things" and our only recourse would be congress removing the judges, adding more judges, and having a new court review the case to replace that ruling with more recent precedent, or for the executive to ignore them wholesale and for congress to not check that.

That is what is meant by the Supreme Court's exclusive jurisdiction over interpreting the constitution, so to take your argument to it's logical conclusion: rights don't exist because the court can say they don't at any time, even if its stated plainly in the constitution, because that would require someone else to be able to interpret the constitution.
