Good question , the mean being bitcoins upward trajectory growth as measured by usd as an example. The true average or mean is really unknown to anyone, thats why different predictive models are constantly invented to guess where we will be. Unknown means that if we land in the future at 200k, 300k 400k etc, pick a number, you will know the true average over the history of bitcoin or some long time frame. So if it seems that bitcoin is doing something unexpected to the upside, or downside, overtime there is an overall trajectory it has been following all along when we regress or get back closer to that true trajectory.
