I mean just do that when the bull run starts getting high. Nobody can tell you the exact best time to start this because we don't know how high the bull run will go nor how long it will remain high. Just use your own judgement.
Is this going to be long term? If it is, and if we can assume the four year cycle will continue, it makes sense to sell more during the bull run, like while it is over $100k, and then skip selling during the bear market (assuming it'll spend a year or more back under $100k).
Personally I just started to sell some of my bitcoin. Sold 0.01 in April, 0.03 earlier this month, gonna do another 0.03 this week. I'll probably do another dozen 0.02 or 0.03 sells over the next 12 months or so before the next bear market starts. I'll also probably sell one or two bitcoin next year when the bull run starts getting high, and maybe another 3.5 btc so I can buy a house. Note that this is only a fraction of my bitcoin. That'll set me up nicely for a while, so I'll have plenty of money for a few years and won't sell anything on the lower half of the next market cycle. With the excess money from selling this bull market I'll either use as a trading stash to make income or I'll just buy back in on the crash and sell a little bit a year starting in like 2028 once prices are high again.
Note that I've been retired off of Bitcoin for almost 5 years now, so selling Bitcoin to stay retired is my life long financial plan (just incase anyone tries to tell me to hold and not sell lol). I've only sold a couple times before when I needed some money but now the whole living off my bitcoin will start.
So I guess I would say I'm in a somewhat similar state as you, planning to start dollar cost selling now long term, specifically because I retired early off of Bitcoin. So assuming the four year cycle continues I will obviously be selling during the high ends of the cycle, not the low ends. I continue to do trading so when I make plenty of income from trading I won't bother selling anything cuz why sell if I don't have to and can keep holding longer, but anytime I need extra money I'll sell, and I'll try to dollar cost sell only when bitcoin is in bull markets. I had to sell 0.4 btc back last year at like $29k to get a new engine in my vehicle and that really sucked haha. But if you play the market cycles and dollar cost sell enough during the bull markets you can skip selling on the lower side of the cycle. Of course if the four year cycle fades away (which seems likely to happen soon, only question is when will it happen) then it gets trickier cuz you can't really plan when to sell and when not to.
