Notably I live in the same country as apple

There is no case law governing the legality (one way or the other) of emulators or roms in the US. There has been no battle to lose. All relevant legal proceedings resulted in settlements.

Apple would have a huge target on their back if they got into the Rom distribution game. Roms contain copyrighted code and assets and redistributing them without permission is strictly illegal, that much is not up for debate.

They can probably have emulators, but without legal roms they're useless and most apple customers are not savvy enough to figure out how to get them. Legal roms would have to be 100% non-infringing homebrew, which, who cares about those (certainly not apple).

Doing anything to make it easy to play copyrighted roms without permission from the copyright owners would be a huge legal risk for apple and they and everyone knows it.

Emulators themselves may even possibly be illegal depending on what else you're doing, again it hasn't been established via any binding case law yet. And even if they arent illegal in and of themselves, there could be steps you can take (in the case of Yuzu, for example) to cross over into the realm of criminal and/or civil liability. Some of those steps could possibly be, for example, soliciting donations or selling access to emulators that are intended to play copyrighted roms, distributing copyrighted encryption keys needed to bypass DRM (the most illegal thing Yuzu was doing imo), and/or just generally telling people exactly how to commit copyright infringement while simultaneously profiting off said infringement.

So it's a very complicated and murky grey area that apple is not going to enter into without a (potentially costly) partnership giving them access to legal roms.

Emulation has been able to live on due to its niche market share, but as with all things, making it easier for people to approach infringement usually results in legal wranglings.

I imagine Nintendo will send a cease and desist, apple will comply and remove the apps, and that will be that.
